Jabara is a citrus fruit from Wakayama. It flowers around May, bears fruit, and is harvested from late November to early February. It is described as a cross between a yuzu and pomelo.
The name jabara is said to come from the phrase “to ward off evil."
In Kitayama Village, Wakayama prefecture, its juice has long been used as a substitute for vinegar when preparing traditional New Year dishes such as saury sushi, kombu rolls, and nori rolls.
